What it is
Sodium phytate is the salt of phytic acid, the natural phosphorus store found in the bran of rice, corn and other seeds. It is a very strong binder of iron, zinc and copper, so it protects formulas from metal-driven oxidation; at higher concentrations phytic acid is also used as a very mild exfoliating and brightening acid.
What it does well
Plant-sourced alternative to synthetic chelators
It binds iron and copper effectively, which slows the oxidation that turns formulas yellow or rancid, and it is readily biodegradable.
